Coconut Cake😋

I was drowned in the coconuty aroma!The coconuty waves were painting all of my things into it’s color. What a coincidence!! Coconut flavored chocolates, biscuits, pina-colada drink and even my shower gel, shampoo all was in the coconut variants. It was like god telling me to make something coconuty to eat too(Like god has only this thing to take care of😝😬).Whatever it may be but I like to think that god is taking care of me😊😉.

Next thing I did was to call my mother asking for some suggestions. After listening to me her first reaction was, ‘shock’!! Then slowly it started to lean towards ‘angry’!! And then typical ‘parental advice’!! I felt like I was having a deja vu🤔.

Oh! Right,It has happened before. When I was studying in college I felt like drinking coconut water which does not happen to me very often. I went to purchase some coconut(In India,we get fresh coconut water directly through coconut). And returned back with the speed of light after listening to the price. It was not too much. But The idea of spending that much money for coconut water which I get free from tree in my home was just too much for me. I called my mom. At first she was ‘shocked’ that I felt like drinking coconut water.(Now, I don’t even remember why I hated coconut??!!).Then she ‘scolded’ me about how I used to throw tantrums when it comes to coconut.”Now you will understand the value of everything”,she said. And then she gave me a long lecture about how coconut is beneficial for my health and also how spending money for a good reason is not a waste.

A small brainstorming session followed by ”she came!she scolded!she advised!”😝 resulted in decision of  making “Coconut Cake”. Even though it’s name sounds so simple,don’t let it fool you!!(Should I call it ‘Dear Coconut Cake’??) It tastes heavenly. First,the smell put it’s arms around you and not let you go away and then comes the taste test;which will not fail you. It is a moist, crumbly cake which has coconut in every bite. Perfectly sweet. The proof of how divine the cake is, I did not get any photos of it’s piece. Because as I was tasting the cake I could not resist it for 1 minute. I am really sorry for that. But what matters is the “taste” and I can take guarantee for that. I promise,you won’t be disappointed😊😊.

Ingredients :

  • 1/2 cup – Shredded coconut
  • 3 nos – Eggs
  • 1/2 cup – veg. Oil
  • 1 cup – Yogurt
  • 1/2 cup – Sugar
  • 1 cup – All purpose flour
  • 1/2 cup – Semolina flour
  • 1 tbsp – Baking powder
  • 2 tbsp – Vanilla essence

Direction :

  1. Add eggs,sugar,yogurt,veg oil and vanilla in a bowl. And mix it well.
  2. Add semolina flour,all purpose flour,shredded coconut,baking powder into above mixture. And mix it until it’s well combined.
  3. Transfer it into the baking pan which is brushed properly with oil.
  4. Bake it for 40 minutes or until it’s golden brown @350℉.
  5. In a pan add 1 cup of sugar and 1 cup water and half a lime. And boil it on medium heat for 7 minutes.
  6. Pour this syrup when cake is hot and syrup is warm(not hot).
  7. Cover with shredded coconut and let it cool completely.
